In February of this year I received an Instant Pot to replace my 20-year-old slow cooker. Since then I have been researching recipes to try. So far, I have made Borscht, broth, and chicken. Since eating well is 80 percent of my wellness plan, eating real and nutritious food has been my goal. The instant pot makes it easier, especially when it comes to making my own bone broth. I am very happy to share with you my review on Mediterranean Instant Pot: Easy, Inspired Meals for Eating Well by America’s Test Kitchen.



I was excited when I found Mediterranean Instant Pot Cookbook by America’s Test Kitchen. I love their TV show and I love that this cookbook has Mediterranean inspired recipes inside. The Mediterranean diet has been around for ages and is recommended for those of us who suffer from inflammation. 

I was eager to try a recipe, so I tried to coincide two with each other. Greek Style Chicken and Rice and Lemon Yogurt Sauce were the two recipes that I tried. I made the Lemon yogurt sauce the night before so that the lemon and garlic could infuse in the yogurt. The yogurt they recommended is whole milk and not the non fat or light yogurt. I am not a yogurt person so I was pleasantly surprised that the lemon yogurt sauce that you put on the rice was delicious. I bet it smelled yummy, but since I cannot smell I will have to use my imagination and memory of what it would smell like. 

I love that this cookbook has awesome photographs so that I can see what end product will look like and I am not guessing. I hate guessing and feeling like I failed somehow. I also love that this cookbook uses real food and not a lot of canned goods or pre-packaged goods. I also love that the first few recipes are yummy sauces to use on future recipes and that it is short and easy to follow. I will be making the two recipes again. I discovered that using 4 bay leafs in rice adds a wonderful flavor to the rice that I have never considered before. Discovering new flavor combinations makes staying on my wellness plan and eating plan easier. I encourage you to not be afraid of trying new foods and recipes so you don’t get bored.
